To prepare a juicy duck, soak it in a brine of water, salt, sugar, bay leaves, peppercorns, garlic, thyme, rosemary, paprika, coriander, and ground garlic for 12–24 hours in the refrigerator. After draining, pat the duck dry and place it on a rack in the fridge for another 8–24 hours until the skin becomes dry. Before baking, make small punctures in the skin. Roast at 130–140 °C for 1.5–2 hours until the fat renders. Brush with a glaze of honey, soy sauce, orange juice, paprika, and ground garlic, then bake at 220 °C for 5–7 minutes, repeating the glaze layer. Let the duck rest 5–10 minutes uncovered; do not drizzle sauce over it.
