This recipe yields 12 Ukrainian-style bagels, each weighing about 100 g. The dough is prepared in two stages: first a starter is made with 300 g of 1st‑grade flour, 140 g of water, and a teaspoon of dry yeast. Then the main dough is mixed with 700 g of flour, 180 g of water, 120 g of sugar, 15 g of salt, and 80 g of butter. After shaping, the bagels are boiled and baked, and before the final bake they are sprinkled with dry poppy seeds.
