This quick and tasty November cake features a light, melt‑in‑your‑mouth stracciatella‑apricot filling and is gelatin‑free. The batter is made with 10 eggs, a pinch of salt, vanilla sugar or extract, starch, sugar, oil, milk, flour, baking powder, cocoa, and hot water, and is baked in a preheated oven at 170 °C (340 °F) for about 45‑50 minutes. The cream is prepared from cold whipped cream, vanilla sugar, powdered sugar, mascarpone, cream cheese, chocolate shavings, apricots, and melted milk chocolate, and the cake is soaked with apricot compote before being topped with the chocolate‑decorated cream.
