This Christmas cake, "Bougies allumées", is made by whisking together eggs, a pinch of salt, vanilla sugar, and regular sugar, then adding flour, baking powder, milk, and oil. The batter is poured into a 42 × 32 cm baking pan and baked at 170 °C for about 25 minutes. While the cake cools, a strawberry cream is prepared by blending thawed strawberries with gelatin, cold whipping cream, and Philadelphia (or mascarpone) cheese, sweetened with sugar and vanilla sugar. A glaze is whisked from softened butter and sweetened condensed milk, with extra white chocolate melted in. The finished cake is decorated with three small cake candles, rosemary, cranberries, dried orange, and cinnamon, and finished with the glaze and chocolate.
