In this video, we show how to make a simple vanilla ice cream that can be enjoyed as a dessert or snack. The recipe uses sugar, vanilla beans, milk, cream, glucose, egg yolks, and a pinch of salt. First, we clean the vanilla beans and extract the seeds. Then we combine milk, cream, and sugar, bring to a boil, add glucose, and stir in the vanilla. A small amount of the hot mixture is whisked into the egg yolks, then the mixture is returned to the pot and cooked until it reaches 83°C, stirring constantly. After cooling in a double boiler, the custard is strained and poured into a container, frozen, and stirred every 30 minutes until firm. The finished ice cream can be served with a warm spoon.
