This moist strawberry cake is made with fresh strawberries, a strawberry puree, and a strawberry jam filling. The batter is prepared by blending strawberries, reducing the puree, and mixing it with milk, oil, butter, sugar, vanilla, flour, baking powder, and salt. Egg whites are folded in to lighten the batter, and the mixture is baked at 175 °C for 28 minutes. While the cakes cool, a strawberry jam is made from the leftover strawberry pulp, sugar, cornstarch, lemon juice, and salt, simmered until thick. The frosting is a creamy mixture of softened cream cheese, powdered sugar, vanilla, salt, and whipped cream. Once the cakes and jam are cooled, the cake layers are assembled with jam and frosted with the cream‑cheese frosting.
