This dessert, called "Paradise Delight", is a layered coconut mousse and chocolate filling on a chocolate sponge base. The coconut mousse is prepared by dissolving gelatin in cold water, adding hot coconut milk, cooling, then whipping cream cheese, cream, and powdered sugar until thick, folding in the gelatin, and freezing in silicone molds. The sponge is made from eggs, sugar, flour, cocoa, baking powder, and oil, baked at 180°C for 10 minutes, cooled, and cut into circles.
