This recipe shows how to make a spicy red chilli pickle by washing and drying 200 g of red chillies, slitting them, and mixing them with salt, turmeric, chilli powder, kalonji, garlic, and lemon juice. A roasted spice mix of fennel, cumin, coriander, and fenugreek seeds is ground and added to the mixture, which is then stuffed into or coated on the chillies. Mustard oil is heated until it smokes, cooled slightly, and poured over the chillies, then the mixture is transferred to a glass jar and left in sunlight for 2–3 days to develop flavor. The pickle pairs well with parathas, dal‑chawal, or any Indian meal.
