Be careful, because lowering the sugar can cause the yolk to cook too quickly; raise the temperature to below 149°F and stir vigorously. The cream is made with mascarpone, fresh cream, egg yolks, sugar, and water. The coffee syrup uses instant coffee, hot water, sugar, and carrageenan, while the chocolate glaze is made from chocolate and cocoa powder.
