Today we prepare the most delicate bird's milk on agar, milk, egg whites, and chocolate. The simple yet striking dessert melts in the mouth. The recipe calls for 2 egg whites, 400 ml milk, 70 g sugar, 7 g agar, and optional 85 g chocolate. First, dissolve agar and sugar in milk and simmer until boiling, stirring constantly. While the syrup boils, whisk the egg whites to a light, firm foam. Once the syrup has boiled, simmer for another 30–40 seconds, then remove from heat and add chocolate, stirring until fully melted and the mixture is smooth. Gently fold the syrup into the egg‑white mixture, mixing briefly until combined. Pour into molds and let cool. After a few hours the bird's milk is ready: tender, chocolatey, and airy.
