This recipe shows how to make a 2‑in‑1 moringa leaf powder and instant chutney. First, wash and dry fresh moringa leaves, then roast them in an air fryer at the lowest setting for about two minutes. In a separate tray, roast dried red chillies and grated coconut for three minutes, and then roast peanuts, roasted chana dal, urad dal, and sesame seeds for six to seven minutes until golden and aromatic. Let the roasted ingredients cool, then blend them with garlic, salt, and a pinch of hing to produce a coarse or fine moringa powder, which can be stored in an airtight jar. To make the instant chutney, combine one to two tablespoons of the moringa powder with a teaspoon of jaggery, a tablespoon of lemon juice, and a little water, blending until smooth, and serve fresh.
