Start by laying out the 3 puff pastry sheets at room temperature on your work surface. Cut each sheet in half to form squares. Spread chocolate spread in the center of each square using the back of a spoon. Fold the puff pastry over the chocolate spread, bringing the edges together in the middle and pressing lightly with your fingers to seal them. Place the folded pastries seam-side down on a baking tray, leaving some space between each one, and make a few small cuts on the tops with a knife. Brush the tops with beaten egg white and sprinkle a generous amount of sugar over them. Bake in a preheated oven at 180°C (350°F) for about 25 minutes, or until the pastries are golden brown. When they’re beautifully golden, take them out of the oven and serve.
