🌶️ Red Chilli Pickle Ingredients: * Red chillies – 200 g (stems removed, slit in the center) * Salt – 2 tsp (as per taste) * Turmeric powder – ½ tsp * Red chilli powder – 1 tsp * Nigella seeds (kalonji) – ½ tsp * Garlic – 2–3 cloves (crushed) * Lemon juice – 2 tbsp * Mustard oil – ½ cup Roasted Spice Mix: * Fennel seeds – 2 tbsp * Cumin seeds – 1 tsp * Coriander seeds – 1 tbsp * Fenugreek seeds – ½ tsp Method: 1. Wash and dry the red chillies completely (no moisture should remain). 2. Remove the stems and make a slit lengthwise in each chilli. 3. In a bowl, mix salt, turmeric, red chilli powder, kalonji, crushed garlic, and lemon juice. 4. Dry roast fennel, cumin, coriander, and fenugreek seeds. Once cooled, grind them coarsely. 5. Add this roasted spice powder to the mixture and combine well. 6. Stuff the mixture into the chillies or coat the chillies thoroughly. 7. Heat mustard oil until it smokes, let it cool slightly, and pour over the chillies. Mix well. 8. Transfer the pickle into a clean glass jar and keep it in sunlight for 2–3 days for best flavor.
