If the enemy pawn moves two squares and now stands side by side with yours, you can play en passant.

On this move and this move only, you can capture the square behind the pawn.

If you even wait one move, this move is now illegal.

Before we finish, take a look at these two pawns.

If right now white moves this pawn two squares and stands side by side with the black pawn, right now and only right now, black can take this pawn en passant.
