The ribs are seasoned with olive oil, brown sugar, salt, and pepper, then air‑fried at 325°F for 15–20 minutes until medium‑rare. While the ribs cook, a chimichurri is made by mincing shallot, garlic, parsley, and combining them with roasted red bell peppers, olive oil, red wine vinegar, smoked paprika, cumin, cayenne, and salt. Once the ribs are done, they are rested for five minutes, then plated and topped with the chimichurri.
